Chicken & Dumplings Recipe:
1 whole chicken, cooked & shredded
6 carrots, peeled & diced
3 ribs celery, diced
1 onion, diced
1/2 cup parsley
2 TBSP unsalted butter
1 tsp salt
1/2 tsp smoked paprika
1/2 tsp thyme
1/2 tsp pepper
4 cups chicken stock
1 cream of chicken/onion/mushroom soup (your choice)
2 cups flour
4 tsp baking powder
1 tsp salt
3/4 cup milk
4 TBSP melted butter
1) Melt 2 TBSP butter in dutch oven, cook celery, onion, carrot with seasonings until softened.
2) Add cream of soup, chicken stock, & chicken. Stir. Bring to a boil; reduce heat to simmer.
3) Whisk flour, baking powder & salt in bowl. Add milk & 4 TBSP melted butter.
4) Drop into stew (about 15 dumplings).
5) Cover, cook 25 minutes (do not uncover).
