Saravana Bhavan Hotel Style Veg Kurma with Amma's personal touch/Vegetable Kurma

Hey all..
Check this simple and yummy hotel style veg Kurma recipe..

Ingredients
Beans 10nos
Carrot 1 big or 2 nos if small
Potato 1 big or 2 nos if small
(Approximately 2cups of veggies)
Onion 1 big thinly sliced
Tomato 1 big chopped
Ginger garlic paste 11/2 to 2tsp
Green chilli 1
Turmeric powder 1/4tsp
Chilli powder 1tsp
Coriander powder 2tsp
Garam masala 1/2tsp
Curd 2tbsp beaten
Cinnamon 1" stick
Cardamom 2nos
Clove 2nos
Bay leaf 1
Coriander leaves 2tbsp
Oil 2tbsp
Salt to taste
Water 1/2 to 1 cup

Paste
Coconut 1/4cup
Almonds(Soaked and peeled)or Cashews 6 or Pottukadalai 2tbsp
Fennel seeds 1/2tsp
Poppy seeds 1/4tsp

Method
Clean,chop and pressure cook the vegetables for 1 whistles.
Heat a pan add the whole spices followed by onion and green chilli.Once the onion becomes soft add the ginger garlic paste and saute till the raw smell leaves.Now add the spice powder one by one turmeric powder,coriander powder and chilli powder and saute till the raw smell leaves.Now add the chopped tomato,salt and cook till it turns mushy.Now add the cooked veggies along with the stock and mix well for 2 mins.Meanwhile take a mixer jar add coconut,almonds/cashews/Pottukadalai,fennel seeds,poppy seeds and 1/4cup of water and grind it to a smooth paste.Add the paste to the veggies along some water and bring it to a boil.At this stage add garam masala,beaten curd and mix well..Don't let it boil for a long time just a boil will be enough.Finally add coriander leaves mix well and switch off..Serve hot with Chapathi,Dosa,Idli,Parotta,Appam,Idiyappam,Puris even Ghee Rice..
